Chef Bill's Smoked Chili

1 cup beer
1/4 cup olive oil
3 tbs. Worcestershire Sauce
1 tbs. dark brown sugar
1 tbs. peanut butter
6 garlic cloves
1/2 tsp. ground habanero

1.5 pounds sirloin steak tips
1.5 pound ground beef cooked
2 cans kidney beans drained
2 stalks celery minced
1/2 large onion minced
8 oz. can crushed tomatos
8 oz. can diced tomatos
6 scallions chopped (greens included)
1 small can tomato paste
1 bottle Heinz chili sauce
1 tbs. minced cilantro leaves
1 tbs. paprika
1/2 tsp. ground smoked yellow fatalii chilis

Blend marinade ingredients in a blender. Marinade steak tips for 3 hours, then hickory smoke (warm) for 3-4 hours. Refrigerate overnight.

Chop steak tips into small pieces and mix all ingredients together and simmer for an hour.

Savor with fava beans and a fine Chianti. And make sure you have an old friend for dinner!
