Wayne Barker's Jamaican Jerk Chicken

1 Tbsp. Jamaican allspice (buy whole and grind fresh)
6 - 8 Scotch Bonnet peppers
1 Tbsp. dried thyme
1 1/2 tsp. black pepper
1 1/2 tsp. ground sage
3/4 tsp. ground nutmeg
3/4 tsp. ground cinnamon
2 Tbsp. salt
2 Tbsp. garlic powder
1 Tbsp. sugar
1/4 cup olive oil
1/4 soy sauce
3/4 cup white vinegar
1 lemon (juiced)
1 lime (juiced)
1 cup white onions - chopped
3 - 4 green onions - chopped
8 - 10 chicken thighs - pierced with fork

Combine all ingredients... Marinate overnight. Grill on coverd grill with hickory or other flavorful hardwood.

...and a word of caution from Wayne - only use the exact ingredients and amounts that you see here. He has worked at perfecting this for a long time and substitutions/changes do not produce the desired results!

I followed the recipe exactly - which is hard for me to do....and can attest to the fact that this is some mighty fine Jerk Chicken!
